From The Paleo Cookbook: 300 Delicious Paleo Diet Recipes, a book full of healthy and delicious recipes that has recently been expanding my repertoire in the kitchen:
- 4 ripe bananas
- 4 eggs
- 1/2 cup butter
- ground black pepper, to taste
- 2 teaspoons olive oil
- Place the bananas in a large bowl and mash them with a fork until smooth. Beat the eggs in a separate bowl until frothy. Mix with the bananas
- add the butter and mix until creamy and smooth. Season with pepper.
- Heat the olive oil in a skillet or on a griddle. Pour 1/4 cup pancake batter for each pancake. Cook pancakes for 2 minutes and then flip with a spatula. Cook an additional 2 minutes, or until the pancakes are golden brown.
They were tough to flip and most of them broke into smaller pieces but I finally got a hang of it by the last few. In any case, they came out delicious and sweeter than you’d expect. Honey was suggested in lieu of syrup but was a bit sweet for me. This will probably feed four or five people.
